Aloo Gobi Recipe

This is my aloo (potato) gobi (cauliflower) recipe..
Following are the ingredients...

Potato ( medium sized) - 6 (boiled for 1 whistle)
Cauliflower flowerets - 1 cup cleaned and chopped into medium size flowers

onions (medium sized) - 1 finely chopped
tomato ( small ) - 1 finely chopped
green chillies - 2 fnely chopped

cumin seeds - 2 tsp
coriander powder - 2 tsp
turmeric powder - 1 tsp
red chilli powder - 1 tsp
ginger - 2 tsp (grated )

coriander leaves - 4 tsp
garam masala( optional) - 1 tsp
oil - 2 tsp
salt - to taste
Asafoetida(Hing) - 1 tsp
water - to mix masala


Method:

Boil and peel the potatoes .Cut the potatoes into quarters .The cauliflower should be cleaned and made into small flowerets.Finely chop the onion , tomato and green chillies. In the chopper , whip the onion, tomato and green chillies without adding water . This will enhance the flavor of the curry.Heat the pan with the oil for 2 mins . Then add the cumin seeds and hing. Once the cumin seeds splutter add the whipped onion- tomato - green chillies. Allow them to form a paste. In the meanwhile, take small amount of water in a bowl .Add grated ginger , turmeric powder, coriander powder,red chilli powder. Once the onion paste is done add the contents of the bowl.Let it be mixed with the paste .Add gob now and allow it to cook for few mins.When gobi is half done add the aloo and sprinkle some water and the required salt . Add half of the coriander leaves now.Every five minutes sprinkle some water .The aloo gobi will be ready in 15 - 20 mins.
Now add the remaining coriander leaves and sprinkle the garam masala over it . Now Aloo Gobi is ready for serving.This can go well with rice, rotis, naan etc..
